As cider comes back into the hands of the people, we see the increase in old varieties that have been rediscovered and on their way to a revitalization. They have been grafted onto rootstock and are being distributed to farmers with an eye towards the future.
We have always used whole local fruit from farmers we know and appreciate. Sourcing apples from orchards that produce wonderful cider apple varieties that make a delicate, precise, and complex cider. When looking into becoming a vegan friendly product it became clear that a lot of the ethos we believe in fit well in line with many beliefs in the vegan community.
