MillStone handcrafts each of our ciders, cysers and meads with respect to the past and with an insatiable interest towards a sustainable future. Each cider is crafted using ingredients sourced entirely within 150 miles. We use fully-ripened, whole, raw, local fruit. Our products are small-crafted without use of chemicals, filtration, or pasteurization. We ferment and age entirely in oak barrels. No preservatives! No additives! No kidding!

Cider, by definition, is an alcoholic beverage created using entirely juice from apples. We tend to innovate by using different cider apple varieties, adding in different ingredients, or by changing processes to adjust flavors profiles. Each cider is blended with the goal of producing the highest quality cider exemplifying our local agriculture and terroir.

cysers

Here at MillStone, a cyser is any combination of honey wine and apple wine where the fermented sugars are derived from honey and apples. Our cysers are often blends of an oak fermented and aged mead & cider. This combination usually boosts the alcohol and adds a new complexity to the aromas and flavor profiles. It is those complex aromas and flavors that makes a cyser a wonderful playground for using additional local agricultural ingredients.

meads

Mead, or honey wine, is a fermented product that has been consumed and produced throughout human history for thousands of years. We feed off the rich history and hope to add something special to its' future. We ferment our meads using local honeys blending them with local water fully fermenting them to dryness in oak barrels.

Innovation is an important part of our mission here at MillStone. With this focus on innovation comes collaboration, changes in process variables, new ingredients, and powerful thought provoking flavors. Below is a list of projects we have collaborated on or have attempted to push the boundaries of innovation on. As always all of these projects use local ingredients and are heavily influence by native yeasts and local flavors.

Below is a partial archive of a few of MillStone's past ciders, cysers, meads, and special projects. Each has provided wonderful learning experiences, expressed a local ingredient, and may return. But for now, they have been laid to rest while we continue to explore and test the boundaries and possibilities of cider making.
